The Hob wasn't even shown aside from her being inside it for maybe 20 seconds when she gets the pin. So, they'll have to introduce it before they destroy it. For all ignorant viewers know, it was just the interior of any random fairly dark building.
They did a good job with Gale's moments being key moments, but they're still gonna feel like an afterthought in the later movies. They didn't even really mention his name in the entire time from his goodbye after the Reaping (at least they got that in--the only goodbyes Katniss got were from her family and from him, so did show that he's important to her in that way) until she got home as the victor. Bleh.
Rue...yeah. I was Not Happy when her district threw a hissy fit. They're supposed to be sad and angry at that point, sure. They're supposed to keep it contained for a bit longer though. I mean, it did show some Peacekeeper show of force, so we know how powerful they are...but we're not really SUPPOSED to know that yet. I really enjoyed that about the books, how we sort of took them for granted as just guys who were there as figureheads of law enforcement without doing anything, and we don't realize how brutal they can be until later.
They did keep the berries--Foxface still dies from stealing them after Peeta unknowingly picks them, and they are ABOUT to eat them when the announcement is made that they both win (unlike in the books, they don't actually get the berries into their mouths). And the way they execute the Gamemaker is by locking him into a room with no exits, and at the center of the room is a table with a bowl of berries. A nice touch, and a change I actually didn't mind--though, didn't we not actually know he was executed until the second book? Meh, in any case, I thought it was a very snazzy way to show his death, and the Capitol's twisted sense of justice.
Trinkets: I had to look it up, but Rue's was just a small hand woven necklace that was her lucky charm. But she knew she could trust Katniss because of the mockingjay pin she (OPENLY!) wore.

Oh, also, the uniforms? Never discussed. I'm a little concerned about this too, because the uniforms in the next Games are kind of important in a way. But, I guess omitting that wouldn't be a HUGE deal. I'm guessing they'll have the same uniforms in those Games that they did in these. :/
