Granted, I don't game on my 8GB rig -- my gaming rig has only 4GB, although I'm in the process of migrating my gaming setup to this 8GB rig -- but I do routinely run multiple VMs, including multiple Windows instances, while also running a dozen+ applications on my host.
The only time I come close to using it all is when I leave a Facebook tab open in Chrome for several days -- close down Chrome, or even just the FB tab, and I can watch my RAM usage instantly plummet!
That said, though, if you want it and can afford it, it certainly won't hurt to have 32GB of RAM!! I'd actually like to upgrade my rig here to 16GB, when I can afford to, just so I can unshackle my VMs more (I limit how much RAM I assign to them, and while it's plenty to do what they need to do more would be better!).
