Some of my favorites:
Totoro--as mention by alguna--is pretty fun. The same studio also did Castle of Cagliostro, which I adore. That one is a comedy/action/crime caper. There's also Spirited Away, which is an adventure story, and has similar animation to Princess Mononoke, although the stories are very different. Theose are also OVAs, so you're basically just watching a long movie. I generally prefer action/adventure anime, so most of my suggestions fall into that realm, but:
Cowboy Bebop--an action series that drifts between drama and comedy at various points. About a group of bounty hunters roaming through space. Awesome soundtrack.
Samurai Seven--A futuristic take on Kurosawa's Seven Samurai. I loved it. It's sort of pseudo-steampunk in some ways, but it's a cool take on a classic story.
Outlaw Star--Sort of an action/comedy space adventure. This show is unabashedly silly at times, but the whole thing is all in good fun. Drags a bit near the end, as I recall, but overall a lot of fun.
Trigun--I'm a huge fan of this one. It starts off as a very silly action/comedy set in a sort of futuristic Western style world, though the tone shifts by the end to being pretty serious. The designs are really interesting, although there are quite a few filler episodes, and the shift in tone bothers some people.
Gundam--Gundam is my favorite, without a doubt. I'd recommend three shows in particular--08th MS Team, 0080 War in the Pocket, and 0083 Stardust Memories. They're sci-fi mecha shows, and focus on a war between two groups of humans, but those three shows focus a lot on the human cost of these wars, which is really interesting for a show featuring giant robots. Lots of action and drama, there. War in the Pocket, in particular, is mostly about the humans involved, and the robots take a back seat to the human stories for the bulk of the show. Great stuff.
Those are the sorts of shows I generally watch--there are quite a few more, but I'd hesitate to give further recommendations without knowing more about the sorts of shows you enjoy.
