it's not new, i just moved into a far better apartment.
.....except for the stove. it's a gas stove (as i may have mentioned), and i usually like gas stoves quite a lot. however, any good features are lost when you CAN'T CHANGE THE GODDAM GAS FLOW.
it has, as far as i can tell, "high" and "off".
since i do more than boiling water, i have two questions:
any good methods of cooking with a single high setting? i'm use to sauteeing (howeverthefuck it's spelled) and do a fair amount of simmering. basically, i want to be able to do things like cooking mushrooms and onions in vegetable oil with minced garlic. i do not know how to do this at full gas settings.
on a larger picture, could it be something easily fixed with the stove? i notice that as you turn it down past where it cuts off, there's still some gas coming out. based on my knowledge of gas and flame, this should only happen if the flow is stuttering at the least. not that the dials have much play anyway - they rotate through less than 90º (Ï/2). but it seems to me that a gas stove with only a 'high' setting probably something wrong with it.
