so, we had a special function at work yesterday, so i decided to do some fancier stuff for it. i made about 20-25 lbs of mediterranean salad and decorated the egg salad bowl with a swan nesting on eggs. the salad came out awesome, got lots of compliments on. (was probably the tastiest thing there since i didnt make any of the other stuff. the pasta salad the other cook made was pretty bland. i touched up the leftovers today and put it out at lunch and it was gone in like 20 min.)
mediterranean salad:
green pepper, tomato, red onion, heart of palm and black olives. the dressing is olive oil, lots of fresh basil, a touch of oregano and marjoram, salt, pepper, garlic and balsamic vinegar. yum.

this is another egg salad that i did another time:
then, for dinner last night i made quesadillas. came out awesome. my wife fully agreed with that, too. said it was the best kosher mexican she'd had.
i started with sun-dried tomato tortillas, since that was what i had on hand. then i smothered them with freshly grated mozzarella and cheddar cheese. on top of that i put pico de gallo, made with home-grown tomatoes and purple jalapenos. then i folded them over and put guacamole on top. YUM.

tonight im gonna make quiche for dinner. hmmm, used up the cheddar last night, tho. oh well. recipe further back on the cooking board somewhere.
