You and I seem to be a dying breed, these days, and even I'm half considering giving up the fight and surrendering to propane as I eye newer, bigger grills for (soon-to-be) my new back yard.
Also, +1 billion points for not using lighting fluid! The stuff's fun to play with to be sure, but food cooked when that stuff's used always seems to take on a faint hint of lighter fluid flavor... I, too, use a chimney, although I've also used electric lighters in the past (basically an electric heating element you bury in the charcoal and it hits up to ridiculous temperatures, enough to ignite the charcoal).
That food looks so good! I'm planning on a big BBQ myself once we're moved into our new house, to celebrate having a house and yard to BBQ in! I'll have to remember this thread so I can steal some of your ideas (and recipes!)...
