Y'all, I love Ree Drummond (Thepioneerwoman.com) and all that she cooks. I've only had one recipe I got from her site turn out poorly and that was probably user error. I just stumbled on her perfect pancakes-- and they're divine. I don't even really like pancakes. They're always bland, or doughy, or greasy, or just empty carbs. Never do they hit the spot of the pancake craving. That is, until now.
You will need;
3 cups PLUS 2 Tbsp of cake flour
3 Tbsp of baking powder
2 Tbsp of granulated sugar (white sugar)
1/2 tsp of salt
2 cups milk
2 whole large eggs
3 tsp vanilla
4 Tbsp of butter, plus some to serve with pancakes if you like that.
Oil (spray, pour. I used vegetable, she used canola. Pam works too).
Combine dry ingredients in a bowl. In a separate bowl, whisk milk, eggs, and vanilla together. Melt the butter in the microwave, add to the wet ingredients. Slowly and gently fold the wet ingredients into the dry until just blended. The mixture will be lumpy.
Pour onto preheated, lightly greased griddle or frying pan (medium low to medium heat, depending on whether you're on electric or gas stove top). Cook until bubbles rise into the center of the pancake, then flip. Cook other side till golden brown. Serve with obscene amounts of syrup and some butter if it floats your boat.
