I tried out a recipe last week for rhubarb that was phenomenal! Rhubarb Crunch.
For my southern brethren (or sistren) who have no idea what rhubarb is, it is a red-celery looking vegetable that is very tart and grows mostly in the northern U.S.
I recommend this to anyone who can get their hands on the plant.
WARNGING: This is NOT a "healthy choices" recipe, its dessert.
Rhubarb Crunch:
Step 1: Filling
3 cups of finely chopped rhubarb (thats about 2 stalks, chopped to the size of a BB).
2 cups of strawberries prepared the same way (this is optional)
2 cups of sugar
4 TBSP of flour
Mix ingredients in a large mixing bowl until all dry contents are absorbed. Then pour into an 8x8 well-greased cake pan.
Step 2: The Crunch
3 cups of brown sugar
1 1/2 cups of flour
1 cup of oatmeal
1 cup of melted butter
Mix the brown sugar, flour and oatmeal in a bowl until the ingredients are well blended. Then pour small amounts of melted butter into the dry ingredients slowly, as to form small doughy clumps. Then pour contents onto the rhubarb filling in the pan and spread over the top evenly.
If there are still lots of [private] of dry ingredients on the crust, spoon more melted butter on top to even it out.
Preheat oven to 350 degrees, then bake for 40 minutes.
Cool for 5 minutes and serve with ice cream or whipped cream for maximum awesomeness.
