Know of any good ones that are dairy-, egg-, nut-, and seafood-free? Trace butter is okay; milk and cream is not. I ask because I'm considering getting a crockpot for my culinary-challenged boyfriend for Christmas (who is allergic to all of the above items), so that not everything he eats at home is a TV dinner or comes out of a can. Because he doesn't know how to cook, I also want to give him some really simple recipes to start him off. Good examples might be lentil soup, chili, rice dishes, stews, and VERY simple meat dishes (if it requires non-crockpot cooking, it is not going to happen). Some vegetable dishes might be okay, but aside from carrots, bell peppers, and potatoes, he isn't particularly into vegetables.
Also, the crockpot I'm considering getting him is 1.5 quarts because he lives by himself, so if the recipes are for 1-2 people, that's even better!
