Oh god, this is soooo tasty...
Ages back, my then-roommate had this dish she loved to make--it involved a pack of lipton onion soup mix, some potatoes, and some veggie oil, and the recipe from the back of the soup mix. Chop up the potatoes, mix with the oil and the soup mix, and bake it for some 40 minutes at 425 (or 450?).
I've adapted it to be my favorite throw-together cheap-n-easy food.
Tonight, I cut up enough red potatoes to half fill a 9x9 pyrex baking dish, added half a diced onion, enough baby carrots (cut into thirds, but that was just to make them more bite sized) to almost fill the dish, and then the peeled whole cloves from two bulbs of garlic. Poured a bit of veggie oil over the whole thing, sprinkled lemon pepper and cayenne all over, stirred, then threw it in at 450 for 45 minutes, stirring halfway through.
Just took it out. It's DELICIOUS. I only ate a little, almost all of it went into the fridge to be leftovers, as was the intention when I made it--other perk of this dish is that it microwaves easily.
Depending on what's in it (i.e. when there are carrots in it I don't like doing it this way so much), I like using the leftovers to make a scramble--cook some spicy Italian sausage, then add the leftovers from this dish, then a couple eggs. Sprinkle cheese on top and boom, a whole new meal...I get bored with the same thing over and over, so there's a lot of appeal to food that can be changed so easily.
Anyone else have a favorite fast-n-easy dish? Maybe one that makes yummy versatile leftovers?
