1 Slab 'o Corned Beef
1 can whole berry cranberry sauce
1/4 cup honey
1 med sized piece of fresh ginger, grated
2-3 cups of orange juice, enough to cover beef.
mix well sauce stuff then add corned beef. bring to a boil then leave on a high simmer/low boil for 2-2 1/2 hours, flipping in the middle.
remove corned beef and allow to cool. (easier to slice like this.) strain sauce then continue to cook it on med-low heat until it reaches a nice thickness. (you can also add some cornstarch mixed with water to speed this, but its better reduced.)
slice corned beef across the grain thinly. when sauce is ready, put a bit on the bottom of a roasting pan just big enough to fit all the beef laid down overlapping. lay down the slices overlapping then pour rest of sauce over top. cover and heat in oven at 300 for half hour or so, til hot.
prepare for taste orgasm.
