I made this the other day and it came out GREAT, even though i was limited by no gluten and very few spices and seasonings. good enough that my wife wants me to write down the recipe, so here it is...
1 3 lb roast
1-2 l lb bag frozen whole green beans
2-3 lb cubed red potatoes
1/2 cup crushed tomatoes
salt
pepper
granulated onion
granulated garlic
spray olive oil
make a mix of slightly more than 1/3 salt and even amounts of onion and garlic. sprinkle the roast on all sides with this and grind a liberal amount of pepper over all sides. spray all sides with olive oil.
spray a non-non-stick pan with olive oil and heat til oil is almost starting to burn. brown all sides of the roast.
line a roasting pan with foil and lay most of the cubed potatoes on the bottom. put the roast in the middle and then the rest of the potatoes around it. spread the green beans (can still be frozen) on top. add the crushed tomatoes on top, then sprinkle around any juices and spices remaining in the pan. cover with foil and bake a 300-325 for 3-3.5 hours.
