I don't know where you live, but do you have an Aldi grocery store near you? If you do, you can afford to get more "better" foods since they cost a lot less there.

Example from my Aldi store:
Say I want to make a salad. They have those pre-packaged things of 'salad' for $0.99. Or, this is better.. head of lettuce for $0.99. Bag of carrots are like $1.20, container of cherry/grape tomatoes $1.29, package of 3 green peppers $1.99. Plus maybe ~$2 for a bottle of salad dressing, just make sure you go light on this if you're trying to eat healthy. $7.47 but it will make you quite a few salads (and the green peppers and dressing will last you through a few batches of salads, so you won't have to buy them again the next time you get lettuce and the other veggies).

A lot of the fresh fruits and veggies are way cheaper there (by comparison, my 3 green peppers $0.66 each there, and usually about $2.50-$2.99 each elsewhere). And other stuff too, of course.. plus I don't know if all of them have this or not, but mine carries a brand called "Light & Fit" and have all kinds of healthy/healthier foods.

Anyway, if you keep fruits and veggies around, it's easy enough to grab some for a snack or to add to a meal.. apples, bananas, grapes, all very easy. When I buy veggies sometimes I will peel/chop/otherwise prep some into little strips or bite size pieces and put them into ziploc bags in the fridge so they're ready when I need them.
