RFs Roast Garlic/Pepper Salmon

I got the idea for this sauce recently and made it at work to try it out. Came out really good, and paired nicely with the salmon. I would've liked it a bit more garlicky, but i had to use two cans of peppers to make enough sauce for all the salmon i was making (70 lbs) and even then it wasnt enough for all of it. (A lot of it was extra, though, so it wasn't a problem that i didnt have sauce for it. i used it for other stuff, like making salmon salad.) if i make it again, which i probably will, ill use 30 heads of garlic instead of 20.

ingredients:

2 heads garlic
~15 oz jar of roasted red peppers
3-4 4-5oz fillets of salmon
olive oil
olive oil spray
cream
soy sauce
salt
pepper
cumin
coriander
white pepper
black pepper
granulated garlic
granulated onion
paprika

cut the root ends off two heads of garlic. put them on a piece of tin foil, that side up, cutting the other side, now the bottom, a little if necessary to keep them from rolling over. i find a sharp serrated knife with a gentle sawing motion works best for this to prevent the head of garlic from falling apart. drizzle olive oil over them, then spray to completely cover the exposed garlic. fold up the foil, sealing it, and stick it in the oven at 250 for two hours.

when its done, squeeze out the cloves of garlic and put them in the blender with a jar of roasted red peppers, including the juice. use ~15 oz jar, whatever size they have about that. blend well, then add that and 3/4 cup of cream to a small pot and bring to a boil. add a pinch each of cumin, white pepper, and a bigger pinch of coriander, and salt to taste. lower to a simmer while in a separate you heat 1.5 tbsp of oil, then add 1 tbsp of flour to make a small roux. add to the sauce, mix well and its done.

somewhere during that, youll want to put up the salmon to bake, ideally so that it finishes at the same time the sauce does, so you can combine and eat right away. first, make a mix of equal parts salt, granulated garlic, granulated onion, paprika, and a little bit of cumin, coriander and coarse black pepper. line a pan with tin foil, spray with olive oil and sprinkle with the spice mixture. lay out the salmon on it and drizzle with soy sauce. sprinkle the top with the spice mix and then spray again with olive oil. bake at 350 for 10-12 minutes.

when the salmon is done, smother with the sauce while both are hot and serve over yellow rice with a sprig of parsley on top.
