we took pork loin and cut butterfly chops, placed the chops btwn sheets of wax paper, and flattened them w/ this tenderizer that my mom got tim from pampered chef for christmas (see link). while he did this, i used a rolling pin to crush ritz type crackers in a baggy. we then dipped tenderloins in an egg and milk bath, followed by the crushed crackers, followed by frying them until cooked through (not sure how long it took).
they were pretty tasty, but we needed to add seasoning of some sort, even if just salt and pepper. i think they would have been a bit better if it had been real Ritz crackers; my aunt used to make them that way for her restaurant. but for our first attempt, i'd say they turned out pretty good.
