RFs Spinach Quiche

8 oz frozen chopped spinach
1 sm-med onion diced small
1 clove chopped fresh garlic
2 oz muenster, diced small or shredded
2 oz white cheddar, diced small or shredded
4 eggs
1/2 to 3/4 cup milk
3 uncooked 6 inch pie crusts
salt
pepper
1/2 tsp ground/rubbed sage
1/2 tbsp flour

in a non-stick pan, sautee the onion until soft
add garlic and sautee for a minute
add the spinach. mix around over medium heat until it defrosts and heats up.
add salt and spices and cook for a few min.
add flour, mix constantly until you dont see any white from flour anymore.
turn off heat.
add the milk and mix well. (should be enough so that theres not much of the spinach sticking out.)
add the eggs and cheese, mix well. (you can reserve a little cheese to put on top if you want. add it towards the end of baking, though.)

pre-bake the crusts for 2-3 min at 350, then add mixture and bake until set.
