So I tried a long time Asian favorite for the first time tonight: pot stickers, sometimes known as pork dumplings.
Its actually pretty easy.
Finely slice about a cup of chinese napa cabbage and mix with a tablespoon salt, a teaspoon of white pepper, 1 pound of ground lean pork, 1/4 cup finely chopped green onions, 1 Tbl white wine, 1 teaspoon cornstarch, and 1 teaspoon sesame oil.
In a separate bowl, mix 2 cups of flour with 1 cup of boiling water until you get a smooth dough (may take some work). Cut dough in half, shape each into a 12 in roll and cut each roll into 1/2 in pieces. Roll each piece into a 3 inch circle and spoon about a Tbl of pork mixture into each.
Heres the hard part (at least for me). Pinch the edges together to form a pouch containing the pork mixture.
Heat up a tbl of vegetable oil in a wok and fry ~8 pot stickers at a time. After one side is fried golden brown, add 1/2 cup water and cover. Cook until all the water is absorbed (~6-7 min). Repeat for the rest of the dumplings.
To make some dipping sauce, combine 1/4 cup soy sauce with 1 Tbl sesame oil.
Enjoy!
