i originally made these a couple years ago at a hotel i was working at. they ate em up like hotcakes. made em again the other night and they were just as awesome as i remember.
to make the wings, peel the skin off if you desire and then cut the wings in half at the joint. dredge in flour, dip in egg, then seasoned flour. (you can repeat a few more times if desired, though its tedious. builds up a thicker breading, though.) deep-fry them til golden brown.
another option which is what i did this time is to spray a pan with oil, lay them out on it, spray them with oil and then bake at 400 til light golden brown.
sauce: (amounts are estimated, your results may vary. ;) )
1/4 cup apricot jam
2 tbsp soy sauce
1/4 cup water
2 tbsp sugar
1 tsp seasoned rice vinegar
bring that to a boil, whisking til smooth.
add 1 1/2 tsp cornstarch mixed well with 1 tbsp water. simmer til thickened
mix sauce with wings and bake 10-15 minutes on 300.
serve with plenty of napkins...
