I am happy this turned out pretty good.
Pork Loin Shepherds Pie
1lb-ish pork loin, (slightly seasoned w/ garlic pepper) roasted, and shredded
1 can green beans
1 can corn
1 can cream of mushroom soup (low-fat, reduced, whichever it's called)
1/4 cup skim milk
2 packs roasted garlic Idahoan mashed potatoes (next time one regular, one garlic)[and yes, I cheated w/ fake tators]
prepare tators according to package. while doing so mix in bake dish shredded pork, veggies, mushroom soup, and milk. top w/ tators evenly and bake on 350 until desired doneness. I baked it until gravy was bubbling up in the corners. [was going to time it but forgot to.]
