Light Sour Cream 2 Tbsp 1/4 c
Sugar 1 tsp 2 tsp
Cider Vinegar 1 tsp 2 tsp
Dijon Mustard 1/4 tsp 1/2 tsp
Pepper to taste
Thinly Sliced or Shredded Cabbage 1 1/2 c 3 c
Green Onion Thinly Sliced 1/2 1
(I used 2 small gr. onions for 2 servings)
In a medium salad bowl, whisk together the sour cream, sugar, vinegar, mustard, and pepper. Add the cabbage and green onions; toss well.
Chill the salad for at least 30 minutes to blend the flavors. Just before serving, toss the slaw again.
Per serving: 83 calories, 2.1g total fat, 1.2 g saturated fat, 6 mg cholesterol, 34 mg sodium, 2.1g protein, 18 g carbohydrates, 2.8g dietary fiber
if you are using this slaw as just a side dish, 1 serving would make plenty for 2-3 people.
